Welcome to our Cookery Club! Here is a favourite recipe of from the cookery club of Mr and Mrs Mouse which we hope you will enjoy – just what you need to brighten up a gloomy afternoon when its cold and windy outside! These lovely honey cup cakes will bring a little sunshine onto the tea table, but be sure to have an adult to help you.
For the sponge:
- 150 g Butter or baking spread
- 50 g Honey
- 100 g Caster sugar
- 2 Eggs large
- 1 Orange
- 1 tsp Orange extract
- Paper cupcake cases to line your tin
For the buttercream:
- 150 g Butter or baking spread
- 50 g Honey
- 400 g Icing Sugar
- 1 tsp of Orange Extract
- Preheat your oven to 180/160C and line a cupcake tin with paper cases.
- Slowly add the beaten eggs, the zest of the orange, 3 tbsp of the orange’s juice and the orange extract. Mix well.
- Fold the self raising flour into the mixture
- Spoon the batter into the cupcake cases and bake for 15‐20 minutes untiil golden brown. Leave to cool completely.
- Make the buttercream by mixing the butter, honey, icing sugar and orange extract together until smooth. Pipe it onto the cupcakes in swirls or spread with a spoon and fork into soft peaks.
- Finally, drizzle some drops of honey on top of the buttercream for decorative effect just before serving.
- Store in an airtight container in a cool place, and eat any leftovers within 3 days.
